I survived day #1!! Woo hoo…it wasn’t easy yet it is definitely doable! Things like eating a can of tuna? Never in my right mind would I do it and it sure wasn’t what I’d call a gourmet meal, yet, with a lot of tomatoes, peppers, and a green onion, it tasted decent. Not just ok but decent! The vegis covered the mush enough where it was actually enoyable. Now the salad I had? I really enjoy salads but some mixed greens with some meat on top just didn’t look good. I NEED my dressing–it’s the best part 🙂 I sooo desperately wanted to add a dressing because it looked like grass on a plate– unappetizing! It sat around and went back to the fridge a few times before I started to google dressings and did you know how many call for milk? sugar?–a lot! Finally came across an avocado dressing-best part was that the ingredients were ones I was allowed to have! It was great! Tasted so good and felt light!
So yesterday, I felt like I really got a glimpse of eating healthy! When you WANT to make it work, you can–took some extra effort in prepping my meals and some googling but it was great to learn that I CAN eat flavorful meals during this time and use these ideas in the future.
I do keep thinking what I’ll do when these 7 days are over! Am I going to return to oooeeeyyyy gooooeeeeyyyy paninis? yummy italian or french bread? my hot cup of coffee with whipping cream?? ohhh how delicious they sound! I’m not sure yet but if I continue to feel better, more energized, and lose weight then I may just have to stick to this!
Now, here’s the thing… the food I ate yesterday WAS decent (with the exception of dinner–it was ok) but I really felt great all day! It sure wasn’t as amazing as the warm minestrone soup that was cooking for everyone else at dinner…..served with garlic bread–yummy–oooohhh how I wanted to have some but I resisted–yes, yes—I resisted it while everyone else was eating it. I’m still thinking about it now just because I have leftovers in the fridge and reminded of it every time I open the fridge! That’s the part that was hard yesterday—making and seeing food that I couldn’t have—but I made it and I didn’t even have one snack at small group!
I think a huge part of the way I felt yesterday was the workout in the morning but I definitely think the food I ate helped a lot too! Working out and eating healthy seems like the perfect combo—only took years and years to figure it out! You may be thinking…Is it just in your head?! Maybe!!! Yet when you can run on such little sleep and feel energized, not just get through the day–I’d say it works!
This morning is a bit of a different story though—my body is aching and in so much pain–goes to show how out of shape I am! Yet, I’m still feeling GOOD and no, it’s not because I slept more because that sure didn’t happen. I simply just feel light and energized!
I hope to include a before and after picture at the end of the week with how my body measurements change! Hoping for the best!
Now, here’s the plan for today (tweeked as I go through the day as needed):
- 1/2 cup oatmeal (made with water)
- 2 eggs (no butter, no salt, no oil)
- 1/2 of a tomato on vine
- 1/2 of a large cucumber
- 1/2 an apple
- 1/2 cup unsalted peanuts
- 3/4 cup chicken
- 2 cups arugula
- 4 Tbsp homemade avocado dressing
Smoothie (1/2 cup):
- Blend 1 cup unsweetened almond milk, 1.5 cups frozen strawberry/mango mix, and 1/4 cup spinach
- Pasta sauce (tomato base with 0 grams sugar-I will be making it homemade instead of buying it using tomatoes, garlic, onions and some spices)
- 1 lb. ground turkey
- 1 container 8 oz. mushrooms, sliced
- 1 yellow onion, chopped
- 1 zucchini, chopped
- with tons of spices since I LOVE flavor
I actually made this on the stovetop instead of crockpot and had 2 cups of this.
Note: I will definitely need to share the minestrone soup recipe with ya’ll as we LOVE it and so do our friends and guests that have tried it–but that’ll be after this journey so I can get my mind off of it 🙂
