Tomato Basil Soup

Who knew that homeschooling would take so much time and energy?! But I’m back! And more pumped than before! I’ve been wanting to share our favorite recipes but by the time dinner is cooked and served, I’m WIPED. I don’t want to take pictures or do anything else. I sometimes don’t even want to eat dinner 🙂 Just want to crash and sleep! BUT I had a boost of energy today thanks to a friend who came over to visit AND the inspiration of my wonderful husband. I finally was able to take a picture of our food  (and yes—Baby Madi finally took a good nap—sleep training day #9–more about this later)!

Anyways, we LOVE, LOVE, LOVE soup especially this time of year when I just want to stay indoors all the time. The cold is….mmm… scary?!? But a warm bowl of homemade soup is simply comfort! It makes the cold more warm 🙂 You guys should know, I don’t like tomato soup or at least I never did until I tasted Panera’s Tomato Soup–delish! So here it is!



My ingredients are grouped based on the steps #1-#4.


  • 4 Tbsp unsalted butter (1/2 stick)
  • 1 onion, chopped
  • 4 cloves garlic, pressed or minced
  • 1/2 tsp thyme
  • 2 (28 ounce) cans of diced tomatoes, drained (reserve juice for later in recipe)
  • 2 Tbsp brown sugar (I added an extra teaspoon this time and thought it was PERFECT)
  • 1 Tbsp tomato paste
  • 2 Tbsp all-purpose flour
  • 2 cups chicken broth
  • 2 Tbsp basil puree
  • 1 cup heavy whipping cream
  • Salt and pepper as needed

1. Melt butter on medium heat. Saute the onions and garlic with the thyme until the onions are translucent.

2. Add the drained tomatoes, brown sugar, and tomato paste. Mix together and let cook for about 8-10 minutes.

3. Stir in flour and cook for 1 minute. Then add the reserved tomato juice and broth. Bring to a boil. Then cover and simmer for 10 minutes.

4. Turn off the fire then mix in the basil puree and cream. Add salt and pepper as needed (make sure you taste it before adding these).

5. Use an immersion blender to puree the soup. Serve with grilled cheese sandwich, croutons, or a rustic slice of bread.

Note: You can use a blender or a food processor also but you’ll have a little more to clean up. Also, you can use fresh tomatoes but canned tomatoes will have more flavor during winter since tomatoes aren’t in season.

Take some time to enjoy a bowl of delicious tomato basil soup (you can add more basil or eliminate it-as the original recipe didn’t call for it at all). Enjoy! 🙂
